Thanksgiving Turkey
(based on a 13 – 15 pound turkey)
Ingredients:
Ginger/Garlic/Pepper Paste (see instructions below)
o 1 small jar of Minced Garlic (use ½ cup)
o 1 small jar of Pureed Ginger (use 2 heaping tablespoons)
o 10 Serrano Peppers
o 1/4 cup of water
3/4 of a 16-oz bottle Italian Dressing
3/4 of a 8-oz bottle Yellow Mustard
3/4 can Orange / Pineapple Juice Concentrate
Salt / Pepper
Paste:
1. Cut tops (stems) off of the peppers and cut them down the middle. Take seeds out (dependent on how spicy you want the turkey, you can keep some seeds in)
2. Add peppers, garlic, ginger and water to blender and blend. Put aside.
Directions:
1. Clean turkey, remove skin from breast side. Also, remove any giblets, etc. inside of turkey. Place the turkey in a roaster pan, breast side up. Cut 2 or 3 slits into breast on each side. Blend Italian dressing, yellow mustard, and orange / pineapple juice concentrate together in blender. You can use the same blender you used to make the paste.
2. Pour mixture over the entire turkey and inside the cavity. Rub turkey down with the paste. Insert some paste into the slits and into the cavity. Sprinkle salt and pepper over entire turkey. Wrap foil over it with an opening over the center and bake in a 200 degree oven for about 6 hours and flip the turkey and then cook for another 4 – 6 hours. The lower the heat and the longer you bake it, the better. Continue to baste it using the gravy in the roaster pan for the duration of baking.
3. The turkey will be VERY tender and will fall off of the bones. I suggest getting a platter and taking the meat off the bones, discard the bones, and drain the liquid in the roaster pan – make sure you reserve the liquid for your gravy. It is great poured over the turkey to keep it moist and great over mashed potatoes as well!
